Ambrosia Macaroons 

 "Gluten Free"

Ingredients

 ½ cup (one stick) room temp. butter

¾ cup sugar

1/8 teaspoon salt

2 teaspoons grated orange peel

3 eggs

24 oz. medium shred coconut

6 oz. chocolate chips, melted for garnish


Procedure:

Beat softened butter in mixer bowl. Add sugar & blend well. Beat in eggs one at a time. Add orange peel & blend. Add coconut & blend until combined.

Drop onto parchment lined sheet pan by tablespoon fulls. Bake for 7 to 10 minutes. or until cookies are set & lightly browned.

Cool completely then drizzle with melted chocolate.

Enjoy in good health!

Yield:   approx. 45 cookies
